Yellow (Golden) Beet Soup With Pineapple Recipe.

INGREDIENTS

  • Olive oil 30 ml (2 tbsp.)
  • 125 ml (1/2 cup) parsnips, diced
  • 250 ml (1 cup) of turnip, peeled and diced
  • 1 medium potato, peeled and diced
  • 8 yellow beets, peeled and diced
  • 60 ml (1/4 cup) onion, diced
  • 1/2 pineapple, diced
  • 1.5 L (6 cups)  low sodium chicken broth or water
  • 1 pinch of nutmeg
  • 1 pinch of salt
  • 1 pinch of pepper
  • 60 ml (1/4 cup) plain yogurt 1%


PREPARATION

1. In a saucepan, heat the olive oil and brown the vegetables and the pineapple.

2. When the vegetables and the pineapple are golden brown, add the chicken broth, the nutmeg, the salt and the pepper. Bake for about 35 minutes over low heat.

3. Make the soup to puree in a blender and serve in glasses with a hint of yogurt.
