Chicken Quesadillas

Ingredients

  • 2 Large Tortillas
  • 1 Chicken Fillet
  • 1 Cup Grated Cheese of your Liking
  • 1/2 Red Capsicum Seeds Removed and Diced
  • 1 Small Red Onion Peeled and Diced
  • Paprika Powder, Salt, and Pepper to taste
  • Oil for Frying
  • Sour Cream and Coriander Leaves to Serve

Instructions

  • Dice the chicken and fry in a little oil until cooked. Season with salt, pepper and paprika powder.
  • Until the chicken is cooking you can prepare the rest of the quesadillas.
  • Cover half of both tortillas with grated cheese, top with capsicum and onion. Once the chicken is done add chicken, cover with the rest of the cheese and then fold the other half of the tortilla on top, so you will get a half moon filled with goodness.
  • Heat a tiny bit of oil on a pan and fry the tortilla for about 2 minutes on each side until the cheese is melted and the tortilla crispy.
  • Remove from a pan and cut to triangles.
  • Serve with sour cream and chopped fresh coriander leaves.

Tips

If you want to have a healthier option, choose whole grain tortillas instead of regular ones and add more vegetables.
Quesadillas are best served warm straight out of the pan but with a little planning ahead you can turn them to a party snack - just prepare the quesadillas like you normally would, cut them to triangles and place them on a baking sheet in one layer – just before the quests arrive heat them up in the oven.
Feel free to play around with different fillings. Different meats and vegetables or even only plain cheese – all options are just wonderful!
