Dice the chicken and fry in a little oil until cooked. Season with salt, pepper and paprika powder.
Until the chicken is cooking you can prepare the rest of the quesadillas.
Cover half of both tortillas with grated cheese, top with capsicum and onion. Once the chicken is done add chicken, cover with the rest of the cheese and then fold the other half of the tortilla on top, so you will get a half moon filled with goodness.
Heat a tiny bit of oil on a pan and fry the tortilla for about 2 minutes on each side until the cheese is melted and the tortilla crispy.
Remove from a pan and cut to triangles.
Serve with sour cream and chopped fresh coriander leaves.
