Wash and peel the potatoes and cut them into quarters.
Wash and finely chop the parsley.
Mix potatoes, garlic powder, and avocado oil in a mixing bowl.
Spread the potatoes out on a baking sheet.
Place in the oven and cook for 30 minutes, flipping the potatoes after 15 minutes.
Not all varieties of potatoes are super good to be bake in the oven. The best varieties are the most "floury", for example, Russet, Idaho or Yukon Gold. The new small potatoes contain less starch, so they give less good results.
