The bacterium has complex nutritional needs, including the inability to ferment different sugars other than lactose, which produces lactic acid, which gives yogurt tart flavor, coagulates milk proteins and acts as a preservative. It is often helpful for the lactose intolerant, whose digestive system is not equipped with the enzymes that break down lactose into simpler sugars. By fermenting milk, produces acetaldehyde, a major aromatic components of yoghurt.
